Thick and spongy American pancakes are best enjoyed with maples syrup.

Ingredients
200 g self-raising flour
1 tsp baking powder
1 egg
300 ml milk
15 g butter, melted
60 g blueberries
Step by step
Put flour, baking powder, egg, milk and melted butter into a bowl of a stand mixer.
Attach the Wire Whip and mix everything together on speed 4.
Take out the bowl from the stand mixer. Add the blueberries to the batter and gently fold them in.
Heat some butter in a large non-stick frying pan.
Add a ladle of the batter per pancake into the pan and bake until bubbles form on the surface of the pancake. Turn and cook until golden.
Repeat until all the batter is used up.
Enjoy with maple syrup.
