Avocado coriander lime dressing

Ingredients
60 ml fresh lime juice
60 ml rapeseed oil
1/4 avocado, peeled and roughly chopped
half a bunch of fresh coriander, chopped
1/2 tsp sea salt
1/4 tsp ground cumin
1/4 tsp freshly ground black pepper
Step by step
Combine all ingredients in blender jar of the KitchenAid ARTISAN Power Plus Blender. Secure lid and turn dial to Speed 1. Slowly increase speed to medium (Speed 5 or 6). Blend until emulsified for about 30 seconds. If necessary, scrape down sides of jar with the Flex Edge tamper.
If dressing is too thick, blend in a splash or two of water. Use immediately, or transfer to airtight container and refrigerate for up to 1 week. (Dressing will darken over time due to oxidisation).
This dressing is great on a Mexican-inspired salad made up of romaine lettuce, grilled chicken, black beans, sweetcorn and cherry tomatoes.
