Tools
Ingredients
130 g all purpose flour
75 g butter
75 g grated Cheddar cheese
75 g grated Swiss cheese
1/2 tsp salt
1/4 tsp pepper
25 ml water
1/4 tsp flakey salt
Step by step
Add the flour, butter, cheeses, salt and pepper to the bowl of a Stand Mixer fitted with the Paddle Attachment or Pastry Beater. Mix on speed 2 until the butter has broken down into pea-sized bits and a sticky dough forms.
Add the water and mix until the dough comes together. If it’s too sticky, add some flour. If it feels too dry, add some water a teaspoon at a time. Wrap the dough in cling film and refrigerate for at least 1 hour.
Roll out the dough on a floured surface until it’s about 0,5 cm thick. Use a ravioli cutter or cookie cutter to form the crackers. Transfer to a lined baking tray and sprinkle some flakey salt on top. Bake for 20 minutes in a 175°C preheated oven until the crackers look golden brown.
