8 cadamon pods
10 fennel seeds
8 whole cloves
4 star anise
10 peppercorns
2 cinnamon sticks
2 cm ginger root
3 tbsp loose black tea
60 g dark chocolate
4 tsp brown sugar
400 ml milk
Step by step
This recipe makes 2 cups of chocolate chai tea.
Add 300 ml water to your KitchenAid kettle and set the temperature to 100°C.
In a mortar and pestle, crush the cardamom pods, fennel seeds, whole cloves, star anise, and peppercorns until they release their fragrant aroma.
Place the crushed spices into a tea press. Add the cinnamon sticks. Cut the fresh ginger into thin slices and add it to the tea press. Sprinkle the black tea leaves into the tea press. Once the kettle reaches 100°C, pour the hot water over the spices and tea leaves in the tea press or a tea pot. Let it steep for 5-7 minutes.
While the tea is steeping, chop the chocolate into small pieces and place them at the bottom of the serving cups. Carefully pour the chai tea into the cups, over the chopped chocolate. Let stand for 2-3 minutes and mix. Add brown sugar to sweeten the tea and finish off with steamed milk.
