Ingredients

400 g carrots

120 g salted pecans

175 g dark brown sugar

110 g caster sugar

225 g all-purpose flour

1 tsp baking powder

1 baking soda

2 tsp ground cinnamon

1 tsp nutmeg

125 ml vegetable oil

70 g greek yoghurt

3 eggs

Step by step

  1. Peel the carrots and cut them in large chuncks of about 5 cm each.

  2. Attach the Multi-Purpose Blade to the food processor. Put the carrots and pecans into the food processor and chop them finely on speed 2.

  3. Add all the other ingredients to the bowl of a stand mixer fitted with the Flat Beater. Turn the Speed Control Lever to 2 and mix until all the ingredients are well combined. Add carrots and pecans and mix for 30 more seconds.

  4. Spray a springform pan with non-stick spray and pour in the batter. Bake for 50 minutes in a 160°C preheated oven.

  5. Let cool completely before removing from the pan.

  6. The carrot cake is most delicious topped with cream cheese frosting and pecans.
