110 g coconut, shredded
30 g almond flour
2 pitted dates
1/2 tbsp lemon juice
1/2 tbsp maple syrup
1 tbsp lemon zest
Step by step
Soak the dates in hot water and let them sit for 10 minutes.
Add 65 g coconut, almond flour, soaked dates, lemon juice, maple syrup, and lemon zest to the Food Chopper. Mix until the mixture sticks together.
Take about a teaspoon of the mixture at a time and roll it into small balls.
Place the rest of the coconut in the food chopper and chop it into a very fine texture. Roll the balls in the extra shredded coconut.
Place the energy balls in the fridge for 15–30 minutes to firm up. Store in an airtight container in the fridge.
