Ingredients

5 broccoli florets

200 g red cabbage

7 carrots

1 yellow bell pepper

1 bunch fresh coriander

3 basil leaves

4 tbsp extra virgin olive oil

2 tbsp white wine vinegar

tbsp 2 plain yoghurt

1 clove garlic, minced

Step by step

  1. Peel the carrots. Cut and remove seeds from the yellow bell pepper. Cut red cabbage in pieces that fit the Food Processor Attachment.

  2. Attach the Food Processor Attachment with the Shredding Disc to the stand mixer. Push the carrots, broccoli florets and red cabbage through it on speed 6. Turn the Speed Control Lever down to 4 and shred the yellow bell pepper. Chop the coriander and add to the vegetables.

  3. For the dressing: chop the basil finely and put it in a bowl. Add the garlic, yoghurt and olive oil and mix well. Add the dressing to the salad and mix thoroughly.
