150 g butter
225 g caster sugar
1 lemon
2 eggs
1 tbsp neutral oil
270 g all-purpose flour
1/4 tsp salt
1/2 tsp baking soda
1 tsp baking powder
400 g cream cheese
150 g sweetened condensed milk
50 g icing sugar
1/8 tbsp violet extract

Step by step
Add the butter, caster sugar and zest of 1 lemon to the bowl of a Stand Mixer fitted with the Paddle Attachment. Mix on speed 4. Add in the eggs and oil and mix until emulsified.
Add the flour, salt, baking soda and baking powder. Mix on speed 2 until dough has formed. Press into a lined baking tray and bake for bake 30 min on 185°C. Let cool on a wire rack.
Mix the cream cheese, sweetened condensed milk, icing sugar, violet extract and food coloring on speed 6 until a smooth frosting forms.
Spread the frosting over the baked cookie and slice into 12 individual bars.
