Fluffy mediterranean couscous

Ingredients
1 tbsp olive oil
160 g couscous
1 tsp stock powder
230 ml water
30 g mint
30 g flat-leaf parsley
1 red onion
3 tomato
30 g golden raisins
3 tbsp lemon juice
Step by step
This recipe makes 3 portions.
Heat the olive oil in a pan on medium heat. Add couscous and bake, stirring occasionally, until couscous turns golden.
Boil the water in the KitchenAid Kettle to 100°C.
Place the couscous in heatproof bowl. Add stock powder and 230 ml hot water. Place the lid on the bowl and let sit for 10 minutes.
Take off the lid and fluff the couscous using a fork.
Chop the mint and parsley. Peel the red onion and cut it finely. Remove the core of the tomatoes and cut them in small cubes. Add to couscous.
Add golden raisins and lemon juice. Mix and serve immediately or store in a airtight container in the fridge.
