Ingredients

110 g butter

250 ml water

140 g flour

5+1 eggs

2 sprigs fresh thyme

1/2 tsp blackpepper

150 g hard cheese

1 garlic clove

Step by step

  1. This recipe makes 15 choux.

  2. Melt the butter and water over medium heat. Stir in the flour with a wooden spoon until a soft dough forms.

  3. Add the eggs one at a time while mixing the dough on high speed.

  4. Fold in the thyme, black pepper, cheese and garlic.

  5. Transfer the dough to a piping bag and pipe the choux onto a lined baking sheet.

  6. Press down the choux with a wet finger so they come out of the oven perfectly round.

  7. Brush the choux with a beaten egg and top off with freshly grated cheese.

  8. Bake for 15 minutes in a 190 degree preheated oven. Let them cool off on a wire rack.
