Make a big batch of these bars, store them in the fridge and take out whenever you feel like having a healthy sweet snack.

Ingredients

200 g medjool dates, pitted

75 g oats

10 g puffed quinoa

25 g pumpkin seeds

45 g dried cranberries

45 g almonds, coarsely chopped

55 g almond butter

1 tsp salt

1 tsp almond butter

30 g coconut oil, melted

Step by step

  1. Chop the dates finely in a chopper or food processor. Transfer to the bowl of a stand mixer fitted with the Paddle Attachment. Add the rest of the ingredients and combine on speed 1.

  2. Line a rectangle baking tray neatly with parchment paper. Use the back of a measuring cup to firmly pack the bar mixture into place. Let set in the fridge for at least 3 hours.

  3. Cut the bars to desired shape and store in the fridge.
