Green gazpacho
A refreshing, chilled summer soup full of amazing natural flavours.

Ingredients
120 ml water
1 cucumber
1 garlic clove
30 g spinach
30 g rocket salad
70 g soft herbs (cilantro, chives, parsley, oregano..)
1/2 lime
2 tbsp white wine vinegar
2 tbsp olive oil
1 tsp salt
1/4 tsp pepper
6 g edible flowers
Step by step
Add water to the jug of the blender. Cut the cucumber lengthwise and scoop out the seeds. Cut the cucumber in smaller pieces. Add to the jug.
Peel the garlic and add to the jug. Add spinach and rocket salad. Add the fresh herbs.
Juice the lime into the jug. Add white wine vinegar and olive oil and season with salt and pepper.
Put on speed 5 and mix till the soup is smooth. Chill in the fridge for a minimum of 1 hour. Pour into glasses or jars and finish off with some extra fresh herbs and edible flowers.
