The chilled vegetable soup from Spain will cool you off on a hot summer day.

Ingredients
800 g tomatoes
1 red bell pepper
1 cucumber
1 white onion
2 cloves garlic
2 tsp vinegar
1 tsp salt
120 ml olive oil
Step by step
Cut tomatoes in half and deseed them. Cut in large chunks and add to the blender.
Peel the cucumber, cut in chunks and add to the blender.
Cut the red bell pepper in half and deseed it. Cut in chunks and add to blender.
Peel the onion, cut roughly and add to blender.
Peel the garlic and also add it to the blender.
Blend the vegetables on speed 7 for about 30 seconds until smooth.
Add the vinegar, olive oil and salt to the blender and mix for 30 seconds.
Chill before serving.
