Ingredients
1050 ml water
250 g sugar
450 g exotic fruit, peeled and chopped (like papaya or golden kiwi)
3 limes
75 g condensed milk
Step by step
Make the ice pucks. Pour 800 ml of water into the Plastic Ice Molds and freeze for 12-24 hours.
Make the syrup. Add the remaining 250 ml water, caster sugar, juice of 3 limes and chopped fruit to a saucepan. Bring to a boil, lower the heat and let simmer for about 30 minutes or until the syrup has the consistency of maple syrup.
Strain and let cool completely before transferring the syrup to a sealable bottle. Store in the fridge.
Allow the ice pucks to rest at room temperature until the outside of the puck has a nice glossy sheen. Place the puck into KitchenAid Shave Ice Attachment, turn speed to 10 and shave the ice into a round shaped cup or bowl. Pack the ice together and turn it out onto a serving bowl.
Drizzle with the cold syrup and condensed milk.
Serve with some chopped fruit and edible flowers.
