Refresh on a hot summer day with this black tea with spiced mint syrup.

Ingredients
1,2 l water
250 g caster sugar
3 cloves
1 lime
8 cm ginger, sliced
1 stalk lemongrass
8 sprigs mint
10 g black tea
Step by step
Place 300 ml water, the caster sugar, cloves, lime zest, ginger slices, lemongrass and mint in a small saucepan. Simmer for 20 minutes, strain and chill until completely cooled off.
Boil 900 ml water to 95°C. Put 10 g of black tea in a tea egg and place in teapot. Pour the hot water in the tea pot and steep for 2 minutes, then remove the tea egg.
Chill the tea for at least 3 hours.
Add the mint syrup to the chilled tea and serve over ice.
