Sourdough bread without yeast

80 g sourdough starter, active
240 ml warm water
8 g salt
400 g all-purpose flour
Step by step
Add the sourdough starter, salt, warm water and all purpose flour into the Bread Bowl. Affix the Paddle Attachment to the Kitchenaid stand mixer and turn the mixer to speed 1. Mix briefly until shaggy dough forms.
Close the lid of the Bread Bowl and let the sourdough rise for 12 hours on the counter. Remove the sourdough from the Bread Bowl and gently place it onto a floured surface. Stretch and fold the dough towards the middle of the dough, then turn and shape the dough into a boule.
Line the inside of the lid with a round of parchment paper and place the dough on it. Cover the dough with the Bread Bowl and let rise for 3 hours. Sprinkle flour on the dough and score the bread. Place the Bread Bowl on the lid and place in the 230°C pre-heated oven. Bake for 25 minutes. Then, remove the Bread Bowl to expose the bread and finish baking for 20 more minutes, or until the crust is crispy golden brown. Remove to a cooling rack and let cool before slicing.
