A hearty soup with lots of fresh vegetables and zesty lemon. Serve with naan for a light dinner.

2 onions
400 g sweet potato
1 zucchini
250 g carrots
3 tbsp olive oil
2 garlic cloves
1 tsp ground coriander
1 tsp ground cumin
400 g canned tomatoes
1 preserved lemon
1 l vegetable stock
200 g cooked red lentils
Step by step
Peel the onions, sweet potato and carrots.
Fit the Food Processor with the Dicing Disk and turn the speed to 1. Add the onions, sweet potato, zucchini and carrots through the Feed Tube to dice.
Heat the olive oil over medium heat and add the diced vegetables, fry for 5 minutes.
Add the garlic cloves, ground spices, canned tomatoes, preserved lemon, vegetable stock and lentils. Cover the pot with the lid and let simmer for 30 minutes.
