Ingredients

750 g cooked sushi rice, seasoned and chilled

5 carrots

300 g red cabbage

7 nori sheets

2 avocado, sliced

30 g garden cress

Step by step

  1. Wash and peel the carrots. Attach the Food Processor Attachment fitted with the 4mm Shredding Disc to the Stand Mixer. Shred the carrots on speed 10. Set aside and shred the red cabbage.

  2. Lay a nori sheet on the sushi mat, shiny-side down. Dip your hands in the water to prevent sticking, then place a thin layer of prepared sushi rice across the sheet leaving the top edge clear.

  3. Arrange the shredded carrots, shredded cabbage, sliced avocado and garden cress across the rice. Using the sushi mat, roll up firmly to form a roll. Wet the clear edge to close the roll. Use a sharp knife to cut the roll in pieces.

  4. Drizzle with sauce of choice and add toppings like seeds, fresh herbs or fried onion.
